Baracoa, Cuba's most remote town
Baracoa, was the first city of Cuba founded by the Diego Velazquez in 1512, and served as the capital and base for Spanish conquest for three years before Santiago, then Havana took over the role. Located in a stunning setting, facing the sea and with its back to the mountains, Baracoa is one of the most isolated towns in the country, and farthest from the political and economical center of Cuba, Havana, which lies 1,070 km away.
This remoteness makes it more difficult to reach, but also a heaven for those who are looking to avoid tourists, as it is not yet on the map of most travelers to Cuba. Its laid-back, friendly atmosphere is completely unique, making it one of the most pleasant cities on the island. As you stroll down the picturesque streets, with colorful murals adorning the buildings, and pastel-colored houses with red-tile roofs, soak up the serene vibe of this quaint Caribbean frontier town. You will succumb to the warm ambience, and wish you would never have to leave.
Baracoa is centered around the lovely, shaded Parque Independencia, where the indigenous chief Hatuey is said to have been burnt alive by Spanish conquistadors. The spot of his alleged death is marked by a bust on the plaza, but it is actually more likely that he died elsewhere. The Plaza is also home to the Catedral de Nuestra Señora de la Asuncion, built in 1805, and housing Columbus' "Cruz de la Parra". Every resident of Baracoa can tell you about the Cruz de la Parra, a hardwood cross that Columbus reputedly brought from Spain and planted in the city, and which has survived from pirates to fires and vandals over the centuries.
The town's two main streets, Maceo and Marti, run from the Parque Independencia. This is where life happens in Baracoa: small but lively restaurants, bars and music venues line the streets. Loud street music, roast pork and snack await you for a night mingling with the locals, learning about their way of life and the town's fascinating past. This is also a great place to try the unique Baracoan cuisine, which is like nowhere else in Cuba. Specialties include tamales, dishes cooked in coconut milk and coconut oil, as well as bacon (a tortilla filled with spicy pork), and teti (a bizarre small red fish).
